Head chef Camilo guzman
Camilo grew up in Bogotá, the capital city of Colombia. When he first arrived in Australia, he started his career at our sister restaurant Pastuso. He quickly climbed up the ranks, and before long he was offered the Sous Chef position at Asado. He has now taken the reins as Head Chef.
Camilo’s love of cooking came from his Grandma, who Camilo says is the best chef he has ever known. He has fond memories of them spending hours cooking and grinding corn to make Arepas to sell in the afternoon. He remembers her sharing stories while they cooked together, which taught Camilo that cooking is about more than just assembling a dish: it’s about the stories that go into it.
He says that the biggest achievement of his career is working as Head Chef at Asado alongside an incredible team that took him almost two years to carefully curate. His favourite part of his role is being able to incorporate what he loves about Latin American cuisine while surrounded by such a talented crew. Knowing he is responsible for his team’s growth is what inspires him to keep working hard.
Camilo loves how Argentinian cuisine is simple, honest and tasty, just like the food from home. He believes in the importance of high-quality ingredients, and his favourite ingredient to work with is premium Wagyu. His years at Pastuso also sparked a love for the Nikkei and Chifa cultures of Peruvian cuisine.
Camilo says his core values were given to him by his parents and will never change: you must be hard-working, honest and care for those around you; thinking of everyone before yourself is always the most important.
